"For some people, pig trotters, pig intestines and pig stomach hardly qualifies as food . But to the Hakkas, a Chinese normadic group who have learnt to persevere under the harsh conditions of war and migration, these are tasty delicacies. Indeed, Hakkas are renowned for their skill of turning offal into delicious food but I'll say that their dishes more rustic than gourmet.
